HISTORY:
The name, SALDO, comes from the Italian word for
“I join or I weld” and was chosen to reflect our winemaking approach
to welding together our wines from grapes
from the best vineyards across the world.
We are known for our flagship Zinfandel, a wine
that launched almost 20 years ago and helped
reinvigorate an overlooked California varietal.
Since then, we have launched a Red Blend,
Chenin Blanc and Shiraz, staying off the beaten
track of the more common varietals and instead
bringing more unexpected offerings
to help uncover what’s next.

SALDO Red Blend - $32.99
An expressive blend dominated by
Petite Sirah–a key element in iconic SALDO
Zinfandel. Rounded out by hints of Syrah
and Grenache from the Central and North
Coasts, this expressive wine bursts with
intense blackberry, blueberry, and cherry. After
fermentation on skins, the wine spends
12 months in French, American, and Hungarian
barrels to gain full body and unforgettable
notes of baking spice. The Blend: Petite

SALDO Zinfandel 375ML - $18.99
Ric and complex, the Saldo Zinfandel is crafted
with precision and care. Fermented in stainless
steel tanks and aged for 9 months in a blend of
new American and French oak, this wine offers a
captivating aroma of blackberries, dark chocolate,
black pepper, cinnamon, coffee, and prunes.
Enjoy its soft mouthfeel, bright acidity, and
long, concentrated flavor that makes
every sip memorable.

We scoured the world for the most
intriguing grapes and sourced them from
some of South Australia's finest regions.
The Mediterranean climate and alluvial soils
yielded one of our most complexly layered
wines while maintaining the approachability
and balanced acidity that makes SALDO
stand out. Aromas of crushed herbs,
blackberry, blueberry and black currant
give way to flavors of mixed dark berries
and a hint of cocoa.

Daou Family Frame of Mind wines this Saturday

Frame of Mind / DAOU Wines
History
DAOU Vineyards is a world-class, premium estate winery
located atop DAOU Mountain (2,200 feet elevation) in the
Adelaida District of Paso Robles, California. Founded in
2007 by Lebanese-born brothers Georges and Daniel Daou,
the winery specializes in Bordeaux-style blends and
high-elevation Cabernet Sauvignon that rival top
estates in Napa Valley and France.
Georges and Daniel Daou grew up in Beirut, Lebanon,
the sons of Joseph and Marie. Joseph was a self-made
businessman, and at the time Beirut was known as
“the Paris of the Middle East.” During summer vacations,
the brothers would play in the ancientolive groves owned
by their grandfather, and it was in these groves that they
learned to love agriculture and the rural way of life.
The brothers’ idyllic childhood came to an abrupt end in 1975. 
At the advent of the Lebanese Civil War, an errant
rocket struck the Daou family home. Georges and Daniel
were both gravely injured, as was their sister Michelle.
Their parents nursed them back to health, then moved
the family to safety in Paris. In Paris, the Daou family
rebuilt their lives together. The brothers later spent
their formative years in Southern France. Here,
they were immersed in a culture of food and wine.
As émigrés to France and, later, the United States,
Georges and Daniel faced the toughest of odds. 
They worked hard, yet they still found themselves
broke after college, wondering what the future might hold.
With the help of their father, however, they
bootstrapped their own technology startup and succeeded
beyond their wildest imagination. And when
they did, they decided to return to their
roots—to those childhood days in their grandfather’s
olive groves and their youthful years in Southern
France. It was time for their winemaking dream
to prevail. And thus began their path to Paso.

FRAME OF MIND
And from the Daou brothers, now comes a new line
of wine, Frame of Mind. Frame of Mind is built
on a simple idea: the wine you choose should
match the moment you’re in. Not the occasion.
Not the rules. Just your mindset. It’s the freedom
to choose what resonates—yours to uncork,
mood by mood. Each bottle reflects a distinct
way of seeing the world—bold expressions,
crafted with intention. Because there’s no single
right way to enjoy wine. 

The Optimist Sauvignon Blanc - $19.99
Optimist is bright, uplifting, and made for moments
worth celebrating. This Sauvignon Blanc pairs vibrant
acidity with surprising depth, delivering a playful
yet layered expression that feels fresh, open,
and full of possibility. Optimist Sauvignon
Blanc shines with vibrant freshness and aromatic
intensity. The nose is expressive and inviting,
offering notes of tropical fruit, passionfruit,
guava, and pineapple, layered with

Pessimist is a wine for those who plan ahead,

of reflection and intensity. A bold and powerful
wine that opens with ample aromas of blueberry,
boysenberry, plum, and strawberry. Smoky notes
of truffle and roasted coffee are accompanied
by floral notes of lavender and lilac. The palate
is lush and inviting, showing both robustness and
elegance with juicy flavors of cherry, huckleberry,
kirsch, and cassis. Underlying suggestions
of fennel, olive, and spice bring enticing
complexity to a silky, balanced finish.

The Realist Cabernet Sauvignon - $19.99
A Realist always brings the truth, and as such this
wine is built around balance, not compromise.
Complex and candid in its flavors, but grounded
in nuance. The Realist delivers as a rich and
remarkably approachable Cabernet Sauvignon.
The nose opens with enticing aromas of black cherry,
ripe plum, and vanilla, accented by subtle
hints of brown spice. The palate is enticing
with a sweet, generous, velvety mouthfeel
that envelops the senses. Grippy yet refined
tannins provide structure without harshness,
leading to a polished, lingering finish.
This is a Cabernet crafted for balance;

with luscious aromas of pineapple, key lime,
honeydew melon, toasted brioche and
crème brûlée. The mouthfeel is soft and
rounded, enveloping the senses with tropical fruit,
citrus zest, kiwi and subtle hints of
honey. Bright acidity ebbs into a creamy finish,
adding a perfect flourish to this
quintessential Paso Robles Chardonnay.

2023 Sauvignon Blanc - $32.99
The Sauvignon Blanc is grown in our estate Mary’s Vineyard in Calistoga, containing some of the oldest Sauvignon Blanc plantings in Napa Valley at more than 30 years old. The old vines offer concentration and complimentary young vines add vibrance, and a small amount of Semillon from the estate adds a roundness to the wine. This vineyard is planted to two clonal selections: Musqué, for aromatics and flavors, and
Clone 1 for structure and length. The grapes are harvested by hand in small lots over the course of three weeks allowing for ideal attributes to be developed in the fruit for complexity.
2022 Chardonnay - $42.99
The grapes for this Chardonnay are sourced from two vineyards: three blocks in the Vista Montone Vineyard located just east of Carneros, and Frasamani, a long-term grower partner vineyard located in the southernmost part of Carneros. These sites were selected for the variety of vineyard aspects (N, NE) and various vine age, soils and clones, which offer a complex palette of aromas, flavors and textures.
2023 Merlot - $42.99
Quattro Theory Merlot is predominantly sourced from two vineyards: Antica Vineyard and Vista Montone. Antica, located in Foss Valley of Soda Canyon in the Atlas Peak AVA, runs north to south at 1,500 feet and benefits from cool nights and daytime temperatures influenced by the Carquinez Strait. Planted in 1996 to clone 181, this late-ripening site allows for extended hang time and flavor development. Vista Montone, situated just east of Carneros in Napa Valley, is named for its sweeping views of the Bay
and Carneros hills—“Vista Montone” meaning “view of the sheep.” This 2.26-acre vineyard features a single block of Merlot, first planted in 2018.

This Cabernet is structured primarily around valley floor fruit from two estate vineyards located in the St. Helena AVA, offering ripe fruit character, good structure and a smooth, long finish. Further complexity and elegance is added to the blend with the addition of estate mountain vineyards from AVAs including Mt. Veeder and Atlas Peak.
2022 Neyers Sage Canyon Rhone Style Red - $36.99
Neyers Vineyards was established by Bruce and Barbara Neyers in the early 1980s when they bought a 35-acre parcel of potential vineyard land in Conn Valley, a foothill region of the Napa Valley, a few miles east of Saint Helena. At the time, Bruce was National Sales Manager at Joseph Phelps Vineyards, and Barbara was a cook at Chez Panisse Restaurant in Berkeley. A portion of the land was developed to vineyards over the next few years, and in 1992 they staged their first harvest. That same year, they hired Dave Abreu to oversee their vineyards — now planted to Merlot and Cabernet Sauvignon — and Bruce teamed up with Berkeley-based French wine importer Kermit Lynch, a decision that began to shape the couple’s vision for Neyers Winery. Neyers spent the next 25 years with Kermit Lynch, and travelled regularly to France in the course of his work, importing wines from 150 small, family-owned businesses, all of them farming sustainably or organically, and using traditional, old-world winemaking techniques.
